
I decided to refresh this recipe on the blog because it’s just too good not to share! At first, this recipe was a Truffle Three Cheese Gnocchi, but I just was not a fan of the Truffle Butter. You can always sub in the Truffle Butter for the butter if that is your preference, but it isn’t mine so I’m changing this post. 🙂
I am obsessed with this recipe though. It is the absolute easiest “Mac n Cheese” twist you will ever make and it lasts forever if you are just making it for yourself.
With this recipe there are 3 different steps.
- Make the Roux (a fancy name for gravy).
- Add the cooked Gnocchi
- Toast the Breadcrumbs
Done! Well, there are a few more steps like cooking the Gnocchi and putting bread crumbs on the top and toasting it for a few minutes, however, in a nutshell – that’s all it is!

Ingredients are super easy too! Cheese, milk, a tad bit of flour, garlic, butter, cheese and gnocchi and you’ve got this meal ready to go!

Melt 2 tbsp butter over med-low heat in your cast iron pan. Add flour, when combined, add the 2 cups of milk and whisk until it gets thick then add the cheese and stir until completely melted – should be the consistency of a cheese sauce. Add more milk by the tablespoon the thin the sauce, if needed.
You have just made a gravy!
On a Saturday morning, if you fry some bacon or sausage, just use that grease instead of butter, add milk and a bit of flour to thicken and you have breakfast gravy! Do the same thing with your turkey at Thanksgiving – take some of the juices from the roasting pan, add milk and flour and viola you have gravy!

Take Roux off heat and add cooked Gnocchi.

Add final 2 tbsp of butter and garlic to breadcrumbs and sprinkle on top of the gnocchi and cheese. Put in oven on broil for 2-3 minutes (watch it and make sure it doesn’t burn). You want it to get just a bit of color! Top with the finely chopped parsley and serve!

A couple of notes: You really need to cook this from start to finish in a cast iron pan or dutch oven. I use my Staub Braiser, but it just needs to be able to be cooked on the stove and be put in the oven.
