Mini Chicken Pot Pie

I am loving the fall weather.  Anybody else with me? It’s a little bit cooler outside, getting dark a little bit earlier, and time for sweaters and blankets.  For that reason, I am excited.  In my opinion, there is no better change of the season than summer to fall.  The colors in the trees, the mornings have a brisk smell to them, and you get to finally change out the clothes in your closet to jewel tones and scarves! What could be better than this transition + my recipe for mini chicken pot pie?

The food. That is what is better.

Soups, stews, crock pot meals, and all of the root vegetables that your heart desires. But, there is something about the fall that brings people together.  I refuse to view the Fall like some people.  Even though, yes, the leaves are literally dying, and it is getting darker and colder outside, I welcome this new season, because with new seasons come change.  I believe change is a great thing and guess what we get to usher in change at least 4 times a year with the changing of the seasons.

So let me encourage you to welcome in the Fall season.  Open the doors to sweaters, leggings, uggs.. and Pumpkin Spice (even though I’m a peppermint girl myself).  I know I know what you are thinking!  NOT the leggings and uggs. Yes, I said it. Go ahead and hug that basic sorority girl inside of you and let her break free!

Also, let’s open our homes. Set your table so you’re prone to invite others to your home.  Just like Psalm 23 talks about how God is our comforter in every season.. that comfort could look like a nice big cozy sweater, it could look like that big hug, or it could even look like a dinner with friends around a table.

During the fall and winter months when people stay inside more, they get stir crazy, they get… lonely. Scientists have actually figured out that the more face to face communication we have… the happier we are. The less lonely we are.  The more we are FULFILLED!

So open your home, open my cookbook, make dinner, and enjoy friendship during the fall season.  Don’t know what to make?  Make these sweet little chicken pot pies.  I made them in the cutest individual dutch ovens I found, however, you can make this as one larger pot pie in a pie pan.  Double the recipe if you want to make it in a 9×11 pyrex dish.  It’s up to you… but you can’t mess the mini chicken pot pie up!
