Mexican Corn Dip Recipe

I’m all about one-to-one recipes.  I hate having leftover pieces of ingredients – especially of ingredients I don’t use often (aka canned veggies).  My recipe is not necessarily the tried and true original recipe, so if it’s not how your mom made it, I’m sorry.  BUT – what I can guarantee about this recipe… it makes a tasty dip!  The dip has a nice little kick and is super easy to make!

It takes 4 ingredients!

That is it.  Cream Cheese, Corn, Rotel, and Taco Seasoning.  (You will actually add 2 cans of corn!) Melt down your Cream Cheese until it’s soft enough to mix with the corn and Rotel.  (I usually do this in a microwave safe bowl in the microwave.)

Next, drain the corn and Rotel – this is super important.  The more water/juice you allow in the bowl with the cream cheese the runnier it will be, and this dip is meant to be more chunky then runny.

Add the corn and Rotel and taco seasoning and mix well.

Eat with chips.  Have you had the Hint of Lime Tortilla Chips?  They are amazing.  This is a great recipe to try those with – the lime on the chips really compliments the kick in the dip.
