Croissant Breakfast Casserole Bake

There is something bittersweet about breakfast.  On one hand, I love the food – the eggs, the cheese, the bacon and sausage.  All of it.  On the other hand, I loathe getting out of bed.  The soft sheets and pillow top mattress cover call my name as soon as my alarm starts dinging.  However, Jesus made the snooze button for me.  I use that thing for hours in the morning (you think I’m joking!) 

As you can probably see – the predicament I find myself in is one movies are made out of!  I want the breakfast food, but I want it in bed!  Cue my man.  Oh wait… none of them in sight! So I guess I’ll get up and make breakfast.  As I’m sipping my first cup of coffee of the morning my neurons are not firing on all cylinders therefore beautiful breakfasts made for instagram are not my forte! And I’m sure if you have kids, several jobs, maybe even a couple of outside of work activities – breakfasts aren’t your thing either! 

Which is perfect!  I have the best most tasty recipe ever for you, I put this over on my Instagram and Facebook last week and have just been so behind on recipe content – soo sorry about that, but looking forward to you reviewing it below!!

Breakfast Casserole!  It is so easy and uber tasty!  Only a few ingredients, make it ahead, and heat it up when you wake up!  

I have grown up eating some variety of this at Christmas for Christmas breakfast – but over the years I have tweaked it just a little bit!  I am notorious for adding a little bit of this and a little bit of that until I get it just right. 

White bread was always the staple for this in our house.  It was just delicious especially if we left the bread out to get crusty!  However, I have morphed from white bread to wheat to the best yet.. croissants! 

You need to make sure to tear the croissants into pieces so that the goodness from the egg mixture soaks into the croissants.  You could even cut the croissants in half and then cut into cubes.  The most important thing to remember – expose the inside of the croissants! 

Once you make it you do need to let it soak together for 12-24 hours so this is absolutely a make ahead thing. But – once it is made you can refrigerate it all week and heat up servings at a time.  Beware: it won’t last that long hehe
