
So here it is one of my most popular recipes for how easy it is – the Chicken Pesto Dish!! I need to do an IGTV episode with it… maybe Saturday! Need dinner in a snap – this recipe comes in to save the day and rescue me more than once or twice a month. Chicken Pesto is easy to have on hand especially if you are good with frozen chicken and keep mozzarella cheese in your fridge – plus you can serve it with angel hair pasta, 90 second rice, or my favorite Gnocchi!
I love making this in a pyrex dish because the pyrex I use come with plastic tops and are easy cleanup and saving for leftovers! I served this chicken with my special crescent rolls and asparagus. The crescent rolls recipe can be seen here.
I actually love this recipe because I always have chicken, pesto mozzarella, and crescent rolls in my house. Do you have things like that that you always have on hand? These are great things to make sure you have around – because this dinner is great and depending on the size of your pyrex you can make however much will fit the pan. Sometimes, I make this recipe in a small pyrex that fits one chicken breast! It is perfect for a single girl like me and is just enough for dinner and no leftovers!!

Oh the Chicken Pesto Recipe you’ll love…
Put chicken in a single row (don’t overlap).
Pour Pesto on top. Top that with tomatoes if you want (I leave this off a lot because tomatoes give me heart burn, haha).
Top with shredded Mozzarella Cheese.
Bake at 350 for 25-35 minutes until Chicken is cooked through.
